Boathouse Makeovers

Recently we've been scheduling visits to local Philadelphia boathouses offering an assessment of the NK installations in their entire fleet and installing wiring at no charge. We're starting locally to learn what needs are most prevalent in most boathouses, but we hope to begin expanding these visits across the country in the upcoming months. If you think your boathouse is in real need of an NK makeover, let us know why and we'll work on coming to your rescue so that you'll never have duct taped wiring hanging out of your boats and missing seat magnets ever again.

Recipe

Light Chicken Marsala

  • 4 skinless, boneless, chicken breasts (about 1 1/2 pounds)
  • All-purpose flour, for dredging
  • Kosher salt and freshly ground black pepper
  • 1/4 cup extra-virgin olive oil
  • 6 slices turkey bacon, cut into pieces
  • 8 ounces crimini or porcini mushrooms, stemmed and halved
  • 1/2 cup sweet Marsala wine
  • 1/2 cup low sodium chicken stock
  • 2 tablespoon butter substitute (like Smart Balance)
  • 1/4 cup chopped flat-leaf parsley
  • 1 lb linguine or pasta of your choice

Place the chicken pieces 1 at a time into a freezer bag and pound thin with a mallet, frying pan, oar handle, etc. Lightly salt and pepper each breast. Spread flour onto a plate and coat the chicken on both sides. Heat the olive oil in a large skillet and pan fry the chicken pieces until nicely browned. Flip and repeat for the other side.

Remove the chicken to a plate and add the stock to the pan, scraping any bits off the bottom. Simmer until reduced by about 50%, then add the wine. Simmer for another minute or two, then add the mushrooms, turkey bacon, and butter substitute. Simmer a couple more minutes until the mushrooms have reached the desired tenderness, then add chicken back to the pan for a minute just to coat in the sauce and reheat. Serve chicken over linguine and cover with mushrooms and sauce. Sprinkle with fresh parsley if desired.
